Atlantis, Paradise Island will open an Olives Atlantis restaurant from celebrity chef Todd English on June 1. The eatery will feature an open kitchen and Mediterranean cuisine and provide an interactive dining experience for guests in the resort’s Atlantis Casino. The restaurant will be the first Olive’s branch in the Caribbean.
Olives Atlantis will offer a casual dining experience with a three-meal-a-day menu, featuring English's interpretive Mediterranean cuisine, plus coastal dishes prepared with high-quality, seasonal and fresh ingredients. The restaurant team will prepare dishes from a rotisserie grill allowing guests to enjoy made-to-order cuts of meat and grilled fish. A Raw Bar will offer a large fresh seafood display with daily offerings of shellfish, clams and oysters; and a wood-burning oven for thin-crust, flatbread pizza. The restaurant will remain open through 3 a.m. for late-night dining.
The restaurant will feature a 6,850 square-foot interior with large vaulted ceilings and decor designed by Jeffrey Beers. Furnishings will include custom, oversized candelabras and wall sconces, plus wood beams and textured brick ceilings, complemented by custom carpets and decorative limestone floor tiles.
