Fiesta Americana Hotels and Chef Ricardo Muñoz Zurita Join Forces to Promote the Flavors of Mexico
With more than 30 years of experience in gastronomic research, academics and teaching as well as the author of 11 books and owner of renowned restaurants, Chef Ricardo Muñoz Zurita now comes to Fiesta Americana Hotels to offer the best of traditional Mexican cuisine. Here, he will revive old and treasured regional recipes and bring them back to the table, where they belong.
With the objective of strengthening and rescuing Mexico’s gastronomy – recognized as an Intangible Heritage of Humanity by UNESCO - the restaurants at Fiesta Americana’s city hotels will include an additional menu with specialty plates created by Chef Muñoz Zurita (pictured above).

There is no better way to do this than with the support of Chef Ricardo Muñoz Zurita, which will allow us to promote local and national cuisine, showcasing the diversity of Mexico’s regions,” he added.
“We have the opportunity to revive some of the great classics of Mexico’s kitchen that will showcase the best local and national flavors. These plates will be sure to tantalize the senses and entice diners to return time and time again,” said Ricardo Muñoz Zurita.
Fiesta America city hotel guests and visitors will be able to try select dishes that best represent Mexico’s gastronomy. While main traditional dishes are already a part of the culinary offering at Fiesta Americana resorts, the alliance with Chef Muñoz Zurita will be formally expanded in the near future to include all brands in the Resort Collection. According to the star chef, the hotels are the best venue to share and retrieve Mexico’s traditions.
"These hotels are the best place to share local cuisine. While it is a great challenge and a great responsibility, it is very exciting to do it with Fiesta Americana," said Muñoz.
The special ingredient of this partnership is Fiesta Americana’s Executive Chef Gerardo Rivera who will join Muñoz in this venture, adding his extensive 15-year experience in the food & beverage hospitality industry. He will be responsible for adapting the menus in the restaurants as well as taking care of all the details to assure this special dining experience is a success.
The alliance will officially start in May at Fiesta Americana Veracruz, followed by Grand Fiesta Americana Puebla, Monterrey and Mexico City. It will then be available at all city hotels in Mexico.
Referred to as the "prophet and preserver of a culinary tradition" by Time Magazine, Chef Ricardo Muñoz will put a great emphasis on the selection of ingredients.
"It will be extraordinary for both domestic and foreign visitors to enjoy local fish or a spectacular mole that is customary of the area they are visiting. There is no doubt that this partnership will allow visitors to further appreciate the gastronomic culture of Mexico," concluded the Chef.
