Grand Miramar’s ‘Spontaneous Cuisine’ Fuels Epicurean Bliss

Already acclaimed as a premier global culinary destination, Puerto Vallarta’s cuisine scene will become even more toothsome as acclaimed Mexican Chef Casiano Reyes brings his menu-free “Spontaneous Cuisine” concept to Grand Miramar All Luxury Suites & Residences.
In 2005, Chef Casiano decided it was prime time to take a fresh culinary approach that wasn’t limited by ingredients that weren’t of top quality or condition. In the process, he created and coined “Spontaneous Cuisine,” an “ultimate culinary trip throughout different regions of Mexico” that allows local available ingredients to guide his creations.
Prior to signing on as executive chef at Grand Miramar, Chef Casiano had generated buzz by wowing patrons with his Spontaneous Cuisine at his namesake eateries in Los Cabos and Riviera Nayarit.

Diaz noted that the Spontaneous Cuisine concept offers an evolving multi-course tasting menu based on the freshest, regional ingredients the chef can source at the local market each day. “It’s a wonderful opportunity to delve into Mexico’s culinary heritage with Chef Casiano’s signature contemporary twist,” said Diaz. “With his expertise and years of experience, Chef Casiano is not only elevating the gastronomic offerings at Grand Miramar, but also trailblazing a new culinary art form in Puerto Vallarta."
After patrons advise Chef Casiano on allergies and food preferences, he’ll tailor a series of “spontaneous” dishes that tap into seasonal produce and herbs, as well as a fresh catch by local fisherman. Among Chef Casiano‘s signature “Spontaneous” dishes are Roasted Corn with Scallops, Foie Gras Enchiladas and Lobster Tail.

In his executive chef role, Chef Casiano stands at the helm of resort’s three restaurants. Open for breakfast, lunch and dinner, La Mar offers a sophisticated menu for refined tastes. Cielito Lindo takes you on a culinary tour of Mexico with gourmet creations based on exotic regional specialties, while La Terraza pampers with a variety of tasty treats in an informal setting with an ocean view that reaches to the horizon.
As a social hub, The Gin Joint is considered the pinnacle of Puerto Vallarta chic with mixology and a breathtaking 360-degree view of Banderas Bay. Views are elevated from November through March as whales breach in the warm Pacific waters.
