Join Montage Kapalua Bay and Chef Michael Mina for the Winemaker Dinner

The Montage Kapalua Bay has created the perfect pairing with the five-course Winemaker Dinner that will feature the culinary stylings of celebrity chef Michael Mina.

The dinner will take place on June 13 in the Sunset Room at the Montage and feature a five-course meal designed by chef Mina and paired with wines from the award-winning David Arthur Vineyards and Kosta Browne Winery. The event also features a Moët & Chandon champagne reception, which begins at 6 p.m. with dinner to follow.

Chef Mina designed the menu for the island feast with attention to local ingredients. 

"The menu approach doesn’t exactly change for the location as our style of food remains the same but the use of local ingredients is key," said Mina. "We love to source and highlight local flavors to bring new life to each dish. Flavor profile changes slightly but I always stay true to balance of acidity, sweetness, spice and fat."

Mina approaches menu decisions with a good sense of Maui's local cuisine and culinary traditions. 

"I’ve been to Hawaii many times and feel that I have a good understanding of the cuisine and culture," said Mina. "Island flavors and ingredients crossed with Japanese technique and sensibility is something I really enjoy. Those key elements are what I think of when Maui comes to mind."

The menu highlights local ingredients such as Kona coffee, heirloom tomatoes, big eye tuna, local Strawberries and other fruits. And Mina says that working with the seafood, particularly the tuna, was the most fun.

While all of the courses are sure to be delectable, Mina has a standout. 

"The coffee and tomato dusted tuna with eggplant, fried cauliflower and uni aioli is my favorite," he says.

What else will he bring to the table, so to speak? 

"A few finished sauces and my secret weapon, Chef Adam Sobel," says Mina. 

Seating is limited and the meal is $350 per person, including tax and gratuity.
