Come for the Festival Cervantino, stay for the adventure.

Guanajuato, Mexico dates back to the 16th century and is a UNESCO World Heritage Site today, thanks to its numerous important religious and artistic sites.

The city also played an important role in Mexico's modern-day incarnation, as it was home to the Mexican independence movement as well as the first failed rebellion against colonial rule.

While there are plenty of cultural activities to enchant visitors, not everyone wants to spend their vacation touring museums and historic sites. Luckily, the area is also ripe for those looking to take the cobblestone road less traveled:

Up in the Air, Junior Birdman

Soar high into the skies on a hot air balloon adventure to see the countryside and nearby San Miguel de Allende from the air. Time your journey right, and you can watch the sunrise as you glide across the horizon.

Canyoning in Paso de Vaqueros

Located near the town of San Luis de la Paz, the Paso de Vaqueros canyon offers visitors adrenaline rush after adrenaline rush. Repel down its rocky walls, swim in its natural pools or slip and slide down its waterfalls. Then head back to your hotel where you can regale your new-found friends with your tales of heroism over a cerveza.

Learn to "habla" like a native at one of the area's Spanish schools. Most will have private and group courses to match people's schedules and learning styles. Some will even have classes to suit those in certain fields of study, i.e. medicine, law or business.

El Nopal Mine

Journey deep into the earth and learn more about Guanajuato's history as a silver mining center.

The mine, which dates back to 1868, is no longer active. However, the University of Guanajuato uses it as a teaching facility. Today, tourists can venture down and learn about mining and get a taste of the hard life endured by those who worked there.
