Executive Chef Jeff Mattia, an industry veteran, recently joined Royal Sonesta New Orleans. He brings a farm-to-table approach to the hotel's food-and-beverage outlets and catering services. Mattia has a passion for local farms and sustainable farming, working with growers like Covey Rise, Chappapeela, Two Run and Southern City Greens. "Fresh, local ingredients are essential to good cooking, and they'll have a major role in every aspect of the hotel's food service," he said.
A Connecticut native, Mattia began cooking while serving in the U.S. Marine Corps. His experience includes stints at the prestigious Mohegan Sun Casino and Foxwoods MGM Grand Casino, where he served as chef de cuisine at the four-star rated Craftsteak. He moved to New Orleans in 2010 to become executive sous chef at John Besh's Restaurant August. He also worked under high-profile chefs Tom Colicchio and Todd English.

Chef Mattia arrives just in time as Royal Sonesta New Orleans proudly takes part in COOLinary Restaurant Month in August, organized in association with the New Orleans Convention & Visitors Bureau. Restaurant R'evolution and Desire Oyster Bar will join restaurants throughout the New Orleans area in offering special pricing on select meals.
The campaign highlights the award-winning and authentic cuisine of New Orleans and its culinary community. COOLinary New Orleans has become a staple summer calendar event for locals and visitors alike for more than a decade, serving as the perfect opportunity to experience the Big Easy's world-renowned cuisine.
During August, R'evolution offers a three-course Sunday brunch from 10:30 a.m. to 2 p.m. for only $39 per person. A two-course lunch is available from 11:30 a.m. to 2:30 p.m. on Friday for $20 per person. And a three-course dinner is available from 5:30 p.m. to 10 p.m. Sunday through Thursday for $39 per person. Meanwhile, Desire Oyster Bar offers lunch for only $19.95 and dinner for only $29 Monday through Thursday.
