First Look: New Dining and New Designs Across Seabourn's Fleet

As revealed at Seatrade Cruise Global 2016, Seabourn Line has not only partnered up with world-renowned chef Thomas Keller, as was previously announced, but also master mixologist Brian Van Flandern to elevate the culinary and drink offerings fleet-wide and aboard the forthcoming Seabourn Encore. Plus, the new ship will introduce The Retreat for the ultimate in open-deck serenity.
The Grill by Thomas Keller
Having both worked together before, The Grill by Thomas Keller is a new complimentary specialty restaurant experience with interior design by Adam D. Tihany, what he calls “a portrait of a chef.” The Grill will debut aboard the Seabourn Quest (rendered below) in May 2016 in a 44-guest configuration that replaces the former Restaurant 2 space here as well as on the Seabourn Sojourn and Seabourn Odyssey during their next dry-dock refurbishments. On the new Seabourn Encore, the dining room (rendered in the header above) will have a larger capacity of 94 guests, located in the aft of the ship with an outdoor deck area.

"Wrapped in a fresh design from Adam D. Tihany, The Grill by Thomas Keller will take our already award-winning cuisine to new heights."

Seabourn is committed to offering a consistent product across its fleet, although The Grill will be a classic American chophouse with distinct designs on the existing Odyssey-class ships that will exhibit curved paneling and the Encore which will sport a more open aesthetic. Menus will include popular items like table-side prepared Caesar salad as well as Lobster Thermidor and creamed spinach.
Daily dinner reservations for The Grill onboard the Seabourn Quest will open in April, and there will be no service charge. Even further out, sister-ship Seabourn Ovation will also feature The Grill by Thomas Keller at its spring 2018 launch.

Additionally, mixologist Brian Van Flandern (pictured at left)– who has also worked with Thomas Keller before on the opening of his restaurant Per Se in New York City – will enhance the included drinks available across the entire Seabourn fleet. His fresh cocktails and exclusive menus are already rolling out as he trains the bar staff on his techniques.
"We are honored to bring Brian's creative talents onboard our ships," said John Delaney, senior vice president, global marketing and sales for Seabourn. "Upgrading our complimentary bar and cocktail offerings is another enhancement to our product, and we are confident that these unique touches will continue to elevate our award-winning culinary experience. Guests will enjoy an expanded spirits list, which will include more premium and ultra-premium whiskeys, tequilas, and other spirits," Delaney added.
Called "America's Top Mixologist" by the Food Network, Van Flandern’s cocktails are considered food-friendly, and fresh produce and botanicals will inspire the flavorful cocktails with ingredients sourced locally for Seabourn.
"There is a global revolution taking place right now in the beverage industry as an entire generation is witness to the new golden age of the cocktail," said Van Flandern. "I am delighted to join the Seabourn family, who share my philosophy that the guest experience is paramount and that fresh, quality ingredients are the key to a successful program."
Also unique to the next Seabourn Encore and Seabourn Ovation will be The Retreat, unless it is later determined to add to the other three ships as well. Said to offer the best cabana experience at sea, the serene open deck space on the upper deck will house 15 cabanas with concierge, food and beverage services under shade. Each cabana will come with a large flat-screen television and a stocked refrigerator, and an extra Spa Treatment Cabana will also be available for spa services.
"The Retreat is the perfect environment for guests to experience pure relaxation and rejuvenation, from your own private cabana or shared spaces," said Chris Prelog, Seabourn's vice president of marine hotel operations. "As a perfect rooftop getaway, The Retreat is sure to be among the most popular destinations onboard our vessels."
In the center will be a step-up elevated whirlpool, sun loungers, bar stools, tables and seats. Special amenities will include fresh fruit baskets, sun lotions, Evian mist spray, towels and personalized bathrobes. Cabanas will be available daily for a full-day reservation starting at $350 per couple per day.
