Alaska Airlines and Hawaiian Airlines are bringing new fall flavors to passengers flying in their most premium seats.
The joint airlines have unveiled a totally revamped in-flight dining menu and wine program for their international suites on routes to Europe, Asia, and Oceania.
The new culinary concepts feature dishes designed by award-winning chefs and inspired by travelers’ destinations, as well as enhanced wine selections on board.
Hawaii-born Chef Dell Valdez of Dell's Kitchen & Bakery and Mio PASTALOGY has designed menus for Hawaiian’s international flights. New dishes include Hawaii-inspired flavors like ahi au poivre with celery root puree, huli huli barbecue chicken with kimchi fried rice, grilled pork medallions with a soy-balsamic glaze, and blackened tofu with brussel sprouts and orzo.
Hawaiian passengers traveling in first class from Hawaii to the mainland U.S. will also find new selections inspired by the islands, starting on October 21. Designed by Chef Keaka Lee of Honolulu's Kapa Hale, the dishes include a loco moco for breakfast and braised beef with roasted ‘ulu (breadfruit) for dinner.
Fliers in Alaska Airlines’ international suites will find a refreshed menu by Seattle’s James Beard Award-winning Chef Brady Ishiwata Williams. New dishes are now available for pre-order and include miso-glazed black cod with kimchi fried rice and traditional banchan on flights to Tokyo-Narita, as well as galbi-glazed chicken with fried rice and banchan on flights to Seoul-Incheon.
As for the new wine program, passengers can expect vintages from some of the world’s most renowned winemakers, including Paul Hobbs West Sonoma Coast Pinot Noir and Viña Cobos Cocodrilo Corte Red Blend from Argentina.
"Exceptional dining is an essential part of the premium travel experience and our fall menu brings together the talent and distinct culinary perspectives of chefs in Seattle and Honolulu, with thoughtfully crafted dishes that celebrate the flavors of our home communities while bringing a fresh perspective to dining at 35,000 feet," said Mark Krolick, managing director of in-flight product and experience at Alaska Airlines.
