Seabourn has introduced Earth & Ocean, a fleetwide culinary philosophy that expands the luxury cruise line’s approach to destination-inspired dining through locally sourced ingredients, regional specialties and gourmet dishes.
The philosophy will shape menus, culinary programming and dining experiences across Seabourn’s fleet and ashore. Over the next year, the line plans to introduce additional experiences designed to connect guests with local food cultures, including chef-led activities and market visits.
“Our Earth & Ocean philosophy was shaped by guest feedback about the experiences they value most: exceptional food, personalized service, locally inspired cuisine and meaningful connections to the destinations they visit,” says Michael Stendebach, senior vice president of guest experience and product development at Seabourn.
The concept takes its name from the line’s Earth & Ocean restaurant, which debuted in 2018 with rotating menus featuring fresh, locally available ingredients. Seabourn has since expanded the idea beyond the restaurant into a broader approach to dining throughout the fleet.
Under the philosophy, menus will pair regional specialties, seasonal produce and local culinary traditions with gourmet ingredients sourced from around the world. In The Restaurant, for example, a rotating selection of “Chef’s Market Finds” will highlight local ingredients from the regions where each ship is sailing.
Regional dishes include fresh lingcod with buttered spinach, arugula and green apple in Alaska; pink snapper with truffled spaghetti squash in Australia and New Zealand; and fresh Arctic char with fingerling potatoes and lemon-butter caper sauce in Northern Europe.
Earth & Ocean also draws on the concepts of terroir and merroir, which describe how a location’s environmental characteristics influence the flavors of ingredients from land and sea. Examples include the influence of Alaska’s glacial waters on wild salmon and king crab and the role of Mediterranean olive groves, coastlines and culinary traditions in shaping regional dishes.
Additional dining experiences planned across the fleet include regional scenic-cruising brunches, seafood boils, refreshed Patio menus, fresh pasta offerings and an enhanced caviar program.
The philosophy also emphasizes the preparation and presentation of dishes, along with personalized service and attention to detail.
“Our guests consistently tell us that culinary is a critical part of the travel experience and that personalized service is at the heart of the Seabourn experience,” says Kacy Cole, chief marketing officer of Seabourn. “Our new Earth & Ocean philosophy brings those priorities together through thoughtfully crafted menus, exceptional ingredients, destination-inspired flavors and the warmth that Seabourn is known for.”
Seabourn says it will announce additional menus, programming and destination-focused culinary experiences as the initiative continues to develop.
