In fact, you can trace the origins of couscous back to the Berber people of Morocco. </span></p><p><span style="font-family:">Mustapha of <a href="http://www.berber-walk.com/" target="_blank">Beber Walk</a> grew up in a Berber family and guides tours all around Morocco. He said is favorite home dish "is couscous with seven vegetables and lamb meat because it is [a] famous dish prepared by the mother every Friday."</span></p><p><span style="font-family:">Even if you've tasted couscous at home before and didn't like it, you must try it in Morocco. I didn't like it stateside, but everything changed once I had authentic couscous in Morocco. The taste is much fresher, and it pairs so well with cooked vegetables. </span></p><p><span style="font-family:">Plus, knowing how important it is to family meals and the time commitment it takes to prepare couscous, you can feel the love behind the dish.</span></p><p><b> </span></b></p><p><b><span style="font-family:">Kefta </span></b></p><p><span style="font-family:">Beef or lamb is mixed with fresh spices, rolled into tiny balls and cooked in a tomato and onion sauce. As the dish is winding down, the chef will crack a few eggs on top and let those cook before serving. Goat meat is tender and chewy, but once it is cooked well, it becomes sticky and tasty." </span></p>
