Costa Cruises, the culinary powerhouse of European cruising, has announced yet another incredible collaboration with Michelin-star chef Bruno Barbieri: a new dinner menu featuring twelve exquisite Italian dishes.
With his new menu, Barbieri offers a unique culinary journey. As guests browse the selection, they read the story of each dish; the inspiration behind the culinary masterpieces they dine on.
"A chef's job is the best in the world, because it allows you to reveal who you are and to share your emotions," described Barbieri. "This has always been my aim."
Highlights of the collection include a salad of prawns with endive heart, spiced bread and Mediterranean pesto; garganelli with swordfish, tomato, basil and aged ricotta (a dish that reminds Barbieri of his Riviera); tortellini with Parmesan, bay leaf and nutmeg (flavors that represent his family and the birth of his passion for cooking); salmon with a potato crust and Sicilian vegetable caponata; and lamb cutlets with saffron potatoes and marinated courgettes with thyme.
For vegetarians: a classic spinach flan with parsley, garlic and confit cherry tomatoes; "papa al pomodoro" on a potato cream base with sautéed endive and olives; and a spiced vegetable skewer with pizzaiola sauce.

For dessert, Barbieri has crafted two incredible options: a wild berry bavarois (a delicacy that reminds him of his childhood in the countryside; the fragrant aromas of the woods and mountains), as well as a warm chocolate cake with walnuts, a blackberry sauce and lavender-scented custard.
Additional recent culinary enhancements by the cruise line include a partnership with the Wine Bank in Pollenzo to create an organic wine list featuring over 100 labels, as well as Mozzarella Bars-the first of their kind at sea-where guests can watch as fresh cheese is made to sample while it's still warm.
