For most of us, traveling with food is a disaster: messy drips on shirts and pants, sticky steering wheels or stinky stuff from the backseat when you are already carsick. As a road warrior that has traveled across the country more than a dozen times, as well as married to a money minded-missus, I am here to save the day, and your headache with the occasional on-the-road trip snack / meal.
It is said that Elvis' Favorite sandwich was Banana, Peanut Butter and bacon. It just so happen that with a couple of small tweaks, not only can these tasty sandwiches be made healthier, but can also be made to travel extremely well.
To make this healthy, the oil in the bread is eliminated with the substitution of applesauce, the eggs with cholesterol-free eggbeaters, we sub in mostly wheat flour and in our house we leave off the bacon. However, feel free to do these up however gets you through the trip. I have learned the hard way to never come between a woman and her bacon.
Elvis' "Big Hunk O' Love" Banana Bread Bites
Ingredients:
1 ¼ Cups of White Wheat Flour
¼ Cup of White All Purpose Flour
½ Cup of sugar (we use organic)
1 tsp. of Baking Soda
2 tsp. Cinnamon
2-3 Bananas very ripe / over ripe
½ cup of liquid egg substitute (two eggs here if you want the non healthy version)
½ cup of no sugar added applesauce (4oz of oil for the non-healthy)
2 tsp. of vanilla extract
Additional Optional Ingredients:
Almonds
Pecans
Raisins
Craisins
Chocolate Chips
Bacon Bits
Toppings:
Peanut Butter
Bacon
Honey
Jam
Directions:
Preheat oven to 350 degrees. In a large bowl, combine both types of flour, sugar, baking powder, salt, and cinnamon (in other words, all dry ingredients). In a separate bowl, mix together the mashed bananas, egg substitute, applesauce, and vanilla extract (all the wet ingredients). Add this mixture to the bowl with the dry ingredients, and stir until just blended. Add any optional ingredients at this time. Spoon batter into a large loaf pan (about 9" X 5") sprayed with nonstick spray. Bake for about 45-50 minutes, or until a knife inserted in the middle comes out clean. Allow to cool slightly, and then cut into 16 slices. Cut each slice in half, spread with Peanut Butter, add any additional toppings, and wrap in wax/parchment paper or place into Tupperware.
