WHY IT RATES: Atlantis Paradise Island is not only getting a tremendous new dining option for guests, but a tremendous partner in José Andrés who is as good a man as he is a chef.-Michael Schottey, TravelPulse Director of Digital Content
You won't catch Michelin-starred, James Beard Award-winning Chef José Andrés resting on his laurels. When he's not in the kitchen, look for him on a fishing boat or down in the depths, exploring the wonders of the ocean he adores.
Chef Andrés is renowned for his humanitarian and conservation efforts as well as his culinary artistry. And now Fish, the new fine-dining mecca at The Cove, proudly showcases his talent, heart, and vision-in the form of responsibly sourced, exquisitely prepared seafood dishes that pay homage to these islands, their people, and the sea.
At Fish, reverence for the local marine life runs deep. You'll feel it all around, but especially on the menu, which highlights Chef Andrés' innovative takes on Bahamian favorites such as Scorched Conch, wood-fire-grilled Hog Snapper, and creamy Conch Fritters.
No dish captures the spirit of the place better than the chef's signature entrée, Fried Lionfish. An invasive species that poses a grave threat to the reef population, the lionfish is spear caught and prepared simply, to highlight its delicate flavor and texture.
Even more satisfying: a portion of the cost of each serving goes to Atlantis's Blue Project Foundation, dedicated to preserving marine habitats throughout the Bahamas.
The oceanic inspiration behind Fish by José Andrés is also reflected in the restaurant's chic, inviting space. The innovative design captures the drama as well as the tranquility of an undersea oasis, complete with swirling schools of illuminated sculpted fish, undulating organic forms to define seating areas, and a wall of floor-to-ceiling windows overlooking the beach.
Sipping a handcrafted cocktail, surrounded by soothing hues of teal, sand, and coral, you'll be transported to a tasteful aquatic wonderland-while eagerly awaiting tastes you won't find anyplace else.
