After an enlightening interview with Rebecca Royster, Director of Food and Beverage at Hotel EMC2 in Chicago, I can share a few of this year's holiday food and beverage trends.
Family-Style Feasting
It should come as no surprise that things that bring people together flourish around this time of year. According to Royster, holiday dining experiences will continue to be, as she described it: "oversized, very familial and communal".
What does this mean for diners? Expect multiple courses meant for sharing and plan on getting very cozy with your dining partners while digging in. In continuing with an industry-wide trend, Royster added: "the tables have gotten tighter, the menus have gotten smaller".
These streamlined choices and intimate dining quarters will make it easier for diners and drinkers to catch up with each other.
Options For All
The holidays can definitely be tricky for those who adhere to special diets or have allergies, but restaurants around the country are making sure that no-one feels left out this year. Whether you are avoiding gluten or suffer from a nut or shellfish allergy, you will be delighted to find plenty of options on festive offerings.
Vegans and vegetarians will also be delighted as the current trend of vibrant veggie-centric menu items show no sign of slowing down.
