Holland America Line is scheduled to debut the Morimoto By Sea restaurant aboard Nieuw Amsterdam on Dec. 16, 2023, which it said is the first nightly stand-alone eatery spearheaded by Chef Masaharu Morimoto.
“The restaurant will offer delicious, Asian-inspired dishes and beverages from Chef Morimoto, the cruise line’s Fresh Fish Ambassador,” Holland America said. “The menu will emphasize fresh fish dishes to reflect Holland America Line’s new Global Fresh Fish Program.
It will be situated on Nieuw Amsterdam’s Observation Deck adjacent to the Tamarind restaurant, offering guests a multi-course dining experience.
The restaurant will also include beef, chicken, vegetarian and vegan dishes, as well as Chef Morimoto’s one-of-a-kind alcoholic beverages, such as Morimoto Dream Brut Rosé and Morimoto Junmai Daiginjo sake.
The cover charge is $55 per person, plus an 18 percent gratuity.
“Featuring cuisine from an esteemed culinary authority like Chef Morimoto in his signature restaurant elevates our specialty dining experience for guests on Nieuw Amsterdam,” said Michael Stendebach, Holland America Line’s vice president of food, beverage and guest services. “The menu showcases a symphony of flavors and the freshest ingredients, reflecting the highest standards of culinary excellence from both Holland America Line and Chef Morimoto."
